Personal Protective equipment (PPE) is used to protect food from the risk of cross contamination, preventing dirt and bacteria that is carried on clothing from contaminating food that is to be served to people. Every organisation should have a policy in place regarding the use of PPE and when it should be used. All staff working in the establishment must be aware of the content of the policy and comply with it.
